Increasingly consumers are concerned about the presence of gluten and other potential allergens in food products. Gluten is the general name for a protein found in wheat, rye and barley. While a small percentage of the population have celiac disease, a serious auto-immune disease, and cannot eat gluten, many people report a sensitivity to gluten.
